 Brisket Recipe  

 

Rub: We use a very generous portion of Two Brothers

BBQ Sauce Regular, just don’t be afraid to coat the

meat well. As you see in the picture it looks dark but

you need to add some flavor to this cut. 

 

Cook time: This will vary depending on the size of the cut of meat, but you want the internal temperature of the meat to be around 185 degrees. Once it gets to 185 degrees remove from grill/smoker and wrap in foil, also add some Two Brothers liquid before sealing the foil to keep it moist.. (roughly 8 oz.) Once wrapped in foil, wrap in a large towel and place in a cooler for an hour or two. This will give the meat a chance to absorb some of the juice and re-distribute through the meat. 

 

Cook temp: Very important for a brisket to be cooked low and slow. Try to keep the temp around 220 degrees. This 7.5 lb brisket was cooked almost 8 hours, but the time spent is well worth it. 

 

Smoke : Oak and Pecan wood chunks, but any fruit wood will work. Some people use Hickory but be warned, it is a very strong smoke so be prepared if you use it, as you will taste it.

Collard Greens 

•    Cut the stems out.

•    Wash the leaves and cut them into strips about an inch wide.

•    Then sauté some finely cut strips of green bell pepper and
     sweet onions in a med-high black iron skillet,

•    Next as the peppers and onions begin to soften throw in the collard strips.

•    Cook this just long enough to caramelize the onions slightly but not too long so that      

     the collards get overcooked.

•    Remove from the heat to a large bowl,

•    Use about a third cup of Two Brothers sauce and toss.

 Chicken Grilling 

For grilling bone-in chicken pieces, Charcoal, or light a pile of about 100 briquettes.

When the coals are ready, arrange them even in grill and allow it to heat up with all vents fully open. Just before placing the chicken on the grill, dip a folded paper towel in Two Brothers BBQ Sauce and oil the entire grate using long-handled tongs. Or grill Mop This will prevent the chicken from sticking to the grate. to minimize flare-ups, trim any excess fat from the chicken pieces.


Place the chicken pieces on the grate, directly above the coals, starting with the largest dark-meat pieces first in the center of the coals.


Mop on Two Brothers BBQ sauce. Replace the lid. After 10 Minutes open the lid and turn the pieces that need to be turn and Mop on more two brothers BBQ Sauce. Repeat this for the next 45 to 50 minutes, or until done

 

 Steak Grilling 

Remove the steak from the refrigerator and let it reach room temperature — around 30 minutes. 
Trim excess fat to avoid flare-ups,
Place the steak at the hottest part of the grate, directly above the coals, and let it sear for two to three minutes, then flip the steak and sear the other side for two to three minutes.  Resist the urge to move the steak around with the tongs, as this will prevent optimal grill marks.

Close the lid to prevent flare-ups.

Liberally apply Two brothers BBQ Sauce Flip the steak and repeat the process.

After the steak is properly seared, move it to the warm side of the grate (not directly over the coals), close the lid and continue to cook the steak until it’s at your desired temperature for doneness. after removing the steak from the grill, place on a cutting board, loosely cover it with aluminum foil, and allow it to “rest” for five minutes (the temperature will continue to rise a few degrees while the juices redistribute into the meat).

 

 Grilling Vegtables 

Bell pepper

Red,1 each

Green, 1 each

Onion, 1 each

Squash, 3 each

Zucchini, 3 each

Cut all in ½” cubes

Mix all together

  • Place in perforated pan on hot grill, MOP in Two brothers BBQ Sauce and stir 

  • Let cook for 5 min and steer in more Two brothers BBQ sauce

  • At 10 min remove from grill and serve 

 

 Grilling Ribs 

Add charcoal to one side of the grill. Heat to 350 degrees

Place ribs on side away from charcoal when temp reaches 350 degrees

MOP with two brothers BBQ sauce EVERY 20 minutes for 2 hours

Keep lid closed when not mopping 

For sweet ribs at the end of cooking time add honey too Two brothers BBQ sauce and mop on ribs and remove from heat and serve. 

Over cooking

Heat oven to 350 degrees

Mop ribs with Two Brothers BBQ sauce and place in oven 

MOP EVERY 20 minutes for 2 hours and serve 

For sweet ribs at the end of cooking time add honey too Two brothers BBQ sauce and mop on ribs and remove from heat and serve.
